Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Salmon cutlets II from Erken's Stor kokebok 1914: a fine salmon forcemeat of 500 g salmon, egg whites, and cream, shaped in cutlet molds with a filling of white sauce with mushroom and truffle, poached in a water bath, breaded in egg and rusk crumbs, fried in butter, and served with fried parsley and shrimp sauce.

This variant is a true French 'côtelette' of salmon forcemeat with filled molds, breading, and frying in butter — typical of the party food of Erken's time. The piece of macaroni with a paper frill was meant to imitate the cutlet bone.
Make the forcemeat
Scrape the salmon flesh and pound it with salt and pepper to a fine paste. Add the egg whites a little at a time while stirring constantly.
Sieve and chill
Rub the forcemeat through a hair sieve (fine sieve). Put the mixture in a saucepan, stir for 1 minute with a wooden spoon, set it to chill on ice, and gently stir in the thick, cold cream.
Cook the ragout
Stir the bouillon, egg yolk, mushroom stock, and lemon juice into the white sauce. Reduce to 2.5 dl while stirring constantly, add the cream, and cook 5 minutes more. Strain the sauce and stir until it is cold. Stir in the mushroom and truffle in small dice and salt to taste.
Fill the molds
Put the forcemeat in greased cutlet molds, make an elongated hollow in the middle, and place the ragout in it. Cover with the rest of the forcemeat and smooth it neatly.
Poach in a water bath
Let the molds poach in a water bath for 10 minutes, until the forcemeat has set.
Bread and fry
Take the cutlets out of the molds, dredge them in beaten egg and rusk crumbs, and fry them light brown in butter.
Plating
Arrange the cutlets in a ring on the fish platter. If you like, stick a small piece of uncooked macaroni with a crimped paper frill into each cutlet. Serve with fried parsley and shrimp sauce.
Quantities have been converted to modern measures (g, dl). Lard has been swapped for butter or neutral oil. Rusk is given as dry breadcrumbs/rusk crumbs. The amount of salt has been reduced to a realistic level (1 tablespoon of salt in the original is very much for 500 g of fish).
