How to make it

  1. 1

    Whisk the egg mixture

Whisk the eggs with the milk, strain through a sieve and add a little salt.

  2. 2

    Steam in a water bath

Pour the mixture into a mould with a tight-fitting lid. Place the mould in a flat-bottomed pot of boiling water for about 1 hour. The water should be kept at just below boiling point, not boiling.

  3. 3

    Cut and serve

When the custard is cold, carefully cut it into large cubes with a sharp knife. Serve in clear or brown soup.
