Fricandeau is a classic finer veal dish, here served on rice with a mayonnaise salad.
Shape and brown
Cut the meat finger-thick and shape it into small round cakes. Lard them and brown on all sides in butter.
Layer the pot
Cover the bottom of a pot with the lightly fried roots and the pork rind. Lay the meat on top, moisten with a little veal gravy and set over low heat. Reduce the gravy under a lid.
Cook in the oven
Add a little more gravy and reduce it to a glaze. Then add enough gravy to half cover the meat. Place in a moderately hot oven (about 175 °C (345 °F)) and baste often so the meat does not dry out.
Test and glaze
Prick the meat with a coarse skewer. If the liquid is colourless, the meat is cooked through. Spoon over a little of its own gravy, return it to the oven and repeat about 8 times until glossy.
Serve
Serve hot or cold on a base of rice with an ice-cold mayonnaise salad.
Measures are in modern units and the oven read as about 175 °C (345 °F). The text gives no amounts for pork fat, onion or gravy.
