Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Erken's veal fricandeau à la Talleyrand from 1914: 1.5 kg veal fricandeau (the inside of the leg) is tied with pork, braised for 1–1½ hours in meat stock with carrot, onion, celery, and a bouquet garni, glazed in a hot oven, and served with reduced meat jus on a bed of salad, garnished with tartlets filled with vegetables and creamed spinach, plus tomato sauce.

Fricandeau is cut from the inside of the veal leg, with the grain of the meat. On the same page Erken describes how the piece is cut out, and then gives this French-inspired festive dish named after the diplomat Talleyrand, who was known for his table.
Prepare the meat
Remove all skin and all membranes from the veal, shape it neatly, and season with salt and pepper. Cover the whole piece all around with thin slices of pork and tie it up with string if needed.
Place in the pot
Cut the carrot, celery, and onion small and place them in the bottom of a pot. Lay the piece of meat on top and place the bouquet garni beside it.
Braise slowly
Add enough meat stock that the piece of meat is covered. Lay buttered baking paper over it and let it braise gently over low heat for 1–1½ hours. Baste the meat with the stock every ten minutes.
Glaze the pork
Lift out the fricandeau, place it in a roasting pan, and put it in a hot oven (225 °C (435 °F)) for about 5 minutes, until the pork is glossy.
Reduce the jus
Strain the stock, skim off all fat, and reduce it to a thick, shiny glaze.
Arranging
Pour the reduced meat jus over the meat. Arrange the fricandeau on a mound of lettuce leaves and garnish with the tartlets filled with various vegetables and creamed spinach. Serve tomato sauce alongside.
Amounts are given in modern measures (grams, dl) and "flesk" is interpreted as thin slices of fresh pork belly/bacon. Unspecified amounts (stock, celery, salt, pepper) are estimated. The oven temperature is given in degrees, and "suppevisk" is explained as a bouquet of parsley, thyme, and bay.
