About the dish

A simple autumn salad of cooked root vegetables, tomato and head lettuce, mixed with French salad dressing. The recipe appears in the chapter "Salads, omelets, light dishes" in Henriette Schønberg Erken's "Stor kokebok" (1914).

How to make it

    Prepare the root vegetables

    Clean the cold, cooked carrots, celeriac and potatoes and cut them into fine strips.

    Mix the salad

    Mix the root vegetables with the finely chopped pickled cucumber, the cut-up tomatoes and the divided lettuce.

    Make the French salad dressing

    Stir together salt, pepper and vinegar, and whisk in the oil to a smooth dressing.

    Toss the salad gently with the dressing using two forks.

"Teacup" is converted to about 1.5 dl. French salad dressing (oil, vinegar, salt, pepper) is specified with quantities. The units of measure are modernized (tablespoon → tbsp).
