Make the sponge cake
Whisk the eggs with 250 g sugar for 20 minutes. Stir in the almond drops and the sifted flour mixed with the bicarbonate of soda and cream of tartar. Thin little by little with the lukewarm boiled water.
Bake
Bake in a greased tin for ¾–1 hour. Turn out of the tin, and when the cake is cold, cut it lengthways into 2–3 pieces.
Make the custard
Whisk the cream, egg yolks, vanilla and 30 g sugar together cold. Place over the heat and bring to a barely-there boil, stirring constantly.
Assemble the layers
First put a layer of jam in a vase or bowl, then a tight layer of sponge cake, then a layer of custard, another layer of sponge cake and finally a layer of custard. The custard is poured warm over the sponge cake.
Let it settle
The cake should stand for 24 hours before it is served.
