How to make it

  1. 1

    Prepare the fish

Clean, wash and dry the fish. Cut out the fillets and skin them. Sprinkle the pieces of fish with salt and leave for half an hour. Dry them with the fish cloth, roll them up and push a small skewer through each roll so they do not unroll.

  2. 2

    Cook the fish

Put the rolls in a well-greased ovenproof dish. Pour over the fish stock, wine and lemon juice. Cover the dish with white paper greased with cold butter and put it in the oven about half an hour before serving.

  3. 3

    Make the oyster sauce

Melt the butter, stir in the flour and thin with the stock. Simmer for 10–15 minutes. Open the oysters and add the oyster liquor and the lemon juice to the sauce. Take the sauce off the heat and stir in the egg yolks mixed with the cream. Salt to taste. Thin with a little of the fish cooking stock if the sauce is too thick.

  4. 4

    Arrange

Remove the skewers. Arrange the fish and oysters in a pyramid on a flat dish and pour a little of the sauce over. Serve the rest alongside. Garnish the dish with thin lemon slices, cut up, with a little fresh parsley stuck in.
