Blackberry Jam

Blackberry jam from Erken's Great Cookbook (1914, p. 585): 1 kg blackberries, 375 g sugar, and 1.25 dl water. The berries steep for 5 minutes in a clear sugar syrup, are taken out, the juice is boiled down for 15 minutes, the berries are returned and given a final boil before being filled into a warm crock.

About the dish

One of several blackberry recipes in the preserving chapter. The method of gently steeping the berries and then boiling down the juice gives whole, clear berries in a thick syrup.

How to make it

    Boil the sugar syrup

    Boil the sugar and water until the syrup is clear, and skim it well.

    Steep the berries

    Put the berries in the syrup and let them steep gently for 5 minutes over low heat.

    Remove the berries

    Take the berries out with a slotted spoon and set them aside.

    Boil down the juice

    Let the juice boil down for about 15 minutes.

    Combine and fill up

    Return the berries to the juice and give it a final boil. Pour the jam into a warm crock and cover it once it is fully cooked.

How much sugar should I use for 1 kg of blackberries?
