Erken recommends a ring mould and making the dish the day before. Pineapple or other fruit can be used instead of apricots.
Boil the jelly
Mix the water and apricot juice, sugar, lemon juice, soaked gelatine, unwhisked egg whites and lightly crushed eggshells cold in an enamelled pan. Set over the heat and bring quickly to the boil, whisking hard.
Strain
Take off the heat and leave covered for 10 minutes. Strain through a cloth wrung out in hot water.
Make layers
Pour a little of the jelly into a dampened mould or glass bowl. When it is set, fill the mould with apricots and pour the rest of the jelly over.
Chill
Let it set. A ring mould is best. Make it the day before if you can. Pineapple or other fruit can be used instead of apricots.
Litres and grams are kept. Refined sugar is given as a note. The text does not give leaves, so 30 g gelatine is kept as written.
