A short reference recipe in the section "Sugar for flavor" in "Stor kokebok" (1914); Erken points to the method for lemon sugar.
Rub off the zest
Wash the oranges well and rub off the yellow zest with sugar cubes.
Scrape off
Scrape the yellow off the sugar again with a knife.
Dry
Dry the sugar on a piece of paper in the oven at low heat.
Grind and store
Grind the sugar together with 125 g white sugar, and store it in closed jars or tins in a dry place.
Erken's reference "prepared just like lemon sugar" has been written out with the same quantities and steps as lemon sugar.
