The dish has two layers: a clear jelly with garnish and a cream of berry purée and cream. It is turned out and decorated with berries.
Boil syrup
Boil the water and sugar until clear and skimmed. Put the soaked gelatine into the clear syrup.
Jelly layer
When the liquid has cooled well, stir in the wine or liqueur. When it thickens a little, pour it into a smooth mould. When fairly firm, lay in decoration of grapes, banana slices and strawberries.
Make the cream
Mix the berry purée with the gelatine dissolved in the hot water. When it begins to thicken, fold in the whipped cream.
Fill and set
Fill the cream into the mould. Leave for 4 to 5 hours until the berry jelly is set.
Turn out and garnish
Turn the jelly out and decorate with berries.
Grams and decilitres are kept. The gelatine for the jelly and for the cream is given as two separate items.
