How to make it

  1. 1

    Make the sandwiches

Cut the loaf, which must be a day old, into thin slices, stamp them out with a round cutter and cut off all the crusts. Chop the ham very finely and lay it on the bread. Spread mustard over to taste and press another round slice of bread on top.

  2. 2

    Dip in egg and milk

Beat the egg and stir in the milk. Leave the sandwiches in this for 2 minutes.

  3. 3

    Fry

Melt the butter in a small pan. When it is quite hot, brown the sandwiches on both sides.

  4. 4

    Serve

Place them on paper so the fat drains off. Serve as quickly as possible, sprinkled with finely chopped parsley.
