A festive presentation from the fish chapter of "Stor kokebok": cooked or steamed fish is "veiled" with a rich, egg-thickened sauce and layered with shrimp and asparagus. Erken uses the occasion to explain the steaming of fish - a method she recommends both for flavor and for invalid cookery.
Steam the fish
Clean the fish (flounder or cod) and cut the fillets away from the skin and bones. Place them on a well-greased ovenproof dish and salt. Invert another dish over it, set the dishes over a pot of boiling water and let stand for half an hour. Make a good stock from the skin and bones.
Arrange the fish
Lift the fish up in large pieces and arrange it in layers on a flat, warm platter together with the peeled shrimp and asparagus or cooked, sliced roots.
Keep warm
Set the platter over a pot of boiling water so that everything is heated through.
Make the sauce
Melt the butter, stir in the flour and thin with stock and milk. Let the sauce simmer for 10 minutes.
Enrich with egg yolks
Take the pot off the heat and stir in the egg yolks, lemon juice and the mustard stirred into a little of the sauce. Season with salt.
Veil and garnish
Pour the sauce over the fish on the platter so it is well covered. Garnish with thin lemon slices, each with a small, fresh parsley leaf tucked in. Serve immediately.
Unclear fractions in the OCR have been interpreted as modern measures (1/2 l shrimp, 1/2 l stock, 2.5 dl milk). The quantity of fish is estimated at about 800 g cooked fish. The method has been divided into numbered steps, and the explanation of steaming has been included as its own step. The language in the steps has been modernized, while the transcription keeps the 1914 spelling.
