How to make it

  1. 1

    Make a pocket and stuff

Wipe the meat with the meat cloth, dry it well and beat it. Cut as large a pocket as possible from the back of each chop. Fill the pocket with paper-thin slices of raw apple and with the cooked prunes cut into fine strips. Sew the cut closed.

  2. 2

    Season

Mix the salt and pepper and sprinkle over the chops.

  3. 3

    Fry

Brown the butter in a pan and fry the chops until cooked through, 15–20 minutes.

  4. 4

    Serve

Put the chops on a flat dish. Pour over the sauce, which is made by boiling down the pan juices with the water (or stock, if you have it). Serve with sauerkraut, cooked ornamental pears, cooked prunes or fried tomatoes.
