How to make it

  1. 1

    Clean the artichokes

Scrape the Jerusalem artichokes clean and put them into cold water with 1 tsp vinegar as you go, so they keep their colour.

  2. 2

    Boil

Boil them in boiling, salted water until tender. Cut them into 2–4 pieces. Alternatively, wash them, boil them with the skin on and peel them after boiling.

  3. 3

    Make the sauce

Melt the butter, stir in the flour and thin with the cream. Bring to the boil. Remove from the heat and stir in the egg yolk, parsley, nutmeg and salt to taste.

  4. 4

    Heat together

Bring the artichokes briefly to the boil in the sauce.
