Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Erken 1914: stachys (crosnes du Japon, also called Chinese artichoke) are cleaned, parboiled, dried, and finished by tossing in hot butter over high heat; served in a deep dish with finely chopped parsley.

Stachys (crosnes du Japon, "Japanese potato") was a novelty in Norwegian kitchen gardens around 1900. Erken notes that the tubers contain no ordinary carbohydrates and therefore have "a certain importance in the diabetic diet."
Clean
Clean the tubers well, ideally by rubbing them clean with coarse salt, then rinse them.
Parboil
Parboil the tubers until half-tender in lightly salted water, then drain off the water.
Dry
Let them dry thoroughly before frying.
Fry
Put them in a pan with hot butter and toss them over high heat until done.
Plating
Arrange them in a slightly deep dish and sprinkle finely chopped parsley over the top.
Amounts are estimated, since the original gives no measures. The method is broken into steps; the technique (parboiling followed by pan-frying in butter) is kept.
