Erken's fried chanterelles: 500 g mushrooms are blanched 5 minutes in salted water, dried and fried in 50 g golden-browned butter with pepper while the pan is shaken constantly for a quarter of an hour. Served alone or with roast meat.

A simple mushroom preparation where the mushrooms are first blanched and then fried slowly in browned butter while the pan is shaken constantly. Erken suggests it both as a dish of its own and as a side with roast meat.
Blanch the mushrooms
Place the washed mushrooms in boiling, salted water and let them boil for 5 minutes. Take them up onto a cloth and dry them.
Brown the butter
Shake the butter golden brown in a lightly heated pan.
Fry the mushrooms
Add the mushrooms to the pan with the pepper and shake the pan constantly for a quarter of an hour.
Serve
Serve as a dish of its own or as a side with roast meat.
Measurements are modernized (grams, liter, teaspoon), "sop" written as sopp (mushrooms), and the method divided into steps.
