About the dish

The large, "industrial" version of farm soap, in which the soap is salted out (salting out) and boiled again the next day to become fully pure and firm. Erken highlights it as "excellent good soap for cleaning and for laundry." The recipe uses the scrap fat from the slaughtering and stretches over two days.

How to make it

  1. 1

    Make the lye

Put the slaked lime in a tub, add the soda and half the water boiling. Stir until the soda has dissolved, and set the mixture aside to clarify. Wear safety goggles and gloves - the lye is strongly caustic.

  2. 2

Draw off and make lye number two

Pour the clear lye into a pot. Pour the rest of the boiling water over the sediment, so you get a second batch of lye that is also left to clarify.

  3. 3

    First boiling

Boil the first lye with the fat for 4 hours. Add half of the second clear lye along the way, but so little at a time that the boiling does not stop.

  4. 4

    Salt out

Once the soap has boiled for the 4 hours, add the salt, and let it boil on for 1 1/2 hours. Then take the heat off the pot and let it stand until the next day. After the salt has been added, no more lye must be added.

  5. 5

    Second boiling

Carefully cut the soap away from the liquor, put it back in the cleaned pot, and add the last half of the lye. Boil for 1 hour. If the soap separates after the second boiling, add a little more soda.

  6. 6

    Set and dry

Pour the soap into flat vessels to set, cut it into pieces, and let the pieces dry. The soap is excellent for cleaning and laundry.

Changes from the original

Measurements and units are kept. The "IVa hour" in the OCR is read as 1 1/2 hours. The method, which continues on the next page in the book, has been assembled and divided into numbered steps with modernized language; a warning about caustic lye has been added.

Frequently asked questions

What is bar soap, and what ingredients do I need?
Bar soap is hard soap cast in a mold and cut into bars. For this recipe from Schonberg Erken's "Stor kokebok" (1914, p. 652) you need 5 kg scrap fat, 4 kg soda, 2 kg slaked lime (or 1 kg unslaked), 3 l coarse salt, and 56 l water.
How is the lye made?
The slaked lime is put in a tub, the soda is added together with half the water boiling. Stir until the soda has melted, and let it stand to clarify. The clear lye is poured into the pot, and the rest of the boiling water is poured over the sediment to give a new (second) lye.
How long should the soap boil?
The first lye boils with the fat for 4 hours, while half of the second clear lye is added little by little, so the boiling does not stop. Then the salt is added and the soap boils for 1 1/2 hours. Then the heat is taken off, and the pot stands until the next day before the soap is cut away and boiled on with the last half of the lye - about a full day's work in all.
