Cut Beans in White Sauce

Salted cut beans are soaked about 5 hours, boiled tender, and combined in a white milk sauce of butter, flour, and milk with sugar and nutmeg or pepper; cut snow peas can be used the same way.

About the dish

Cut beans were cut into strips and salted down in crocks. The stew with white milk sauce is a classic Norwegian winter dish for meat, and Erken notes that cut snow peas can be used the same way.

How to make it

    Soak the beans

    Soak the salted beans in cold water for about 5 hours.

    Boil

    Transfer the beans to boiling water that stands well above them, and boil until they are tender. If they are too salty, they can be blanched and then boiled further in fresh boiling water. Drain off the water.

    Make the sauce

    Melt the butter, stir in the flour, and thin with the milk. Bring the sauce to a boil.

    Finish

    Add the beans, sugar, and nutmeg or pepper, and bring the stew back to a boil. Cut snow peas can be used the same way.
