Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Sauce Robert in Erken (1914): chopped onion is browned in butter with paprika, white wine is reduced by half, brown gravy is added and steeped a quarter of an hour, then mustard, lemon juice and anchovy butter are stirred in. Kept warm in a water bath; served with smoked eel.

A classic onion-and-mustard sauce from French cuisine, which Erken uses as an accompaniment to smoked eel and other oily fish. Sardine butter is anchovy butter.
Brown the onion
Finely chop the onion and brown it lightly in the butter together with the paprika.
Reduce the wine
Pour in the white wine and reduce it by half.
Steep the sauce
Add the brown gravy and let the sauce steep gently for 15 minutes.
Finish
Stir in mustard, lemon juice and anchovy butter. Keep the sauce warm in a water bath until serving.
The unclear amount of brown gravy is interpreted as 1–1½ dl. "Sardine butter" is explained as anchovy butter. The steeping time is given in minutes.
