Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Erken's method for salting larger fish: cleaned, unwashed fish is placed in a trough on a layer of salt and sugar mixed 1 liter salt to 2 dl sugar, salt is packed into the belly, the fish is fully covered and can be used after 3 days.

Salting with added sugar gives a milder, rounder flavor than plain salting, and is the forerunner of today's curing (gravlaks) method. Erken gives the ratio of 1 liter salt to 2 deciliters sugar.
Clean the fish
Clean the fish, but do not wash it.
Mix salt and sugar
Mix salt and sugar in the ratio of 1 liter salt to 2 dl sugar.
Place in the tub
Place a layer of the salt-and-sugar mixture in the bottom of a wooden tub or other suitable container, and lay the fish on top.
Salt the fish
Fill the belly of the fish with salt and cover the fish completely with the salt-and-sugar mixture.
Curing
Keep the fish in a cold place. It can be used after 3 days.
The quantities are kept as in the original (1 liter salt to 2 dl sugar). "Fish trough" is given as a wooden tub or other suitable container. The steps are numbered and the language modernized.
