How to make it

  1. 1

    Choose the tongue

Choose the largest tongue, and the one with the thinnest skin. Preferably buy it fresh and salt it yourself.

  2. 2

    Make the brine and salt

Boil a brine of 5 l water, 1 kg salt, 125 g sugar and 10 g saltpetre for 1/4 hour, skimming well. When it is cold, rub the tongue (or other meat to be salted) well with a little saltpetre, about 1 tsp extra. Place it in the brine for 10-12 days.

  3. 3

    Boil the tongue

Put the salted tongue on in cold water with 1 tsp sugar, so that it is well covered. Boil for 2 1/2-3 hours and remove the skin.

  4. 4

    Serve

If the tongue is to be served cold or sliced for the breakfast or supper table, let it cool and lie in the stock it was boiled in for as long as any of it remains. For hot tongue with macaroni timbales, arrange the tongue slices in a ring around the timbales.

  5. 5

    Accompaniments

Serve cauliflower, peas, beans or Brussels sprouts with only melted butter and finely chopped parsley over them. Use tomato sauce as the sauce.
