Blueberry and elderberry cordial was considered particularly beneficial for the sick. The berries are steamed in a crock in a water bath before the juice is drawn off.
Steam the berries
Clean the berries and fill them into a crock, half of each kind. Set the crock in a pot of water and let it heat until the berries have released their juice.
Strain
Strain the juice from the berries.
Boil the juice
Allow 1/4–1/2 kg sugar for each liter of juice. Bring to a boil and skim for 3–4 minutes.
Bottle it
Fill the hot juice into warm, clean half-bottles, then cork and seal them with wax.
Quantities are kept as given; the method has been divided into steps and "over the fire" has been replaced with a modern stovetop description.
