Rice Water

Erken's rice water for the sick: 1/2 dl rice is rinsed and simmered half an hour in 1/2 l cold water, then the water is strained off.

About the dish

Rice water was a mild, soothing drink given to the sick, especially for stomach complaints. The recipe appears in the invalid-food chapter of "Stor kokebok" (1914).

How to make it

    Rinse the rice

    Rinse the rice well.

    Boil out

    Put the rice on in the cold water and let it simmer for half an hour.

    Strain

    Strain off the rice water and serve it lukewarm or cold.

How long does rice water take to make?
The boiling itself takes half an hour. The rice is first rinsed, put on in the cold water and simmers for 1/2 hour before everything is strained. Reckon on about 40 minutes in total.

Why is the rice put on in cold water?
In the original recipe from Schønberg Erken's "Stor kokebok" (1914), the rinsed rice is put into the cold water and heated up together with it. This way the starch gradually draws out into the water and gives a mild, slightly thick drink.
