Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Erken 1914: beets baked whole in a hot oven for 1½–2 hours, peeled while hot, sliced, and mixed with coarsely grated horseradish and a tablespoon of vinegar seasoned with ½ tsp sugar and ½ tsp caraway. Celery can replace the horseradish.

Erken gives the French name "betteraves," as she often does in the vegetable chapter. Oven-baking preserves color and flavor better than boiling, and the dish is served as a cold side salad.
Bake the beets
Wash the beets without cutting into them and bake them in a hot oven (about 200 °C (390 °F)) until tender, 1½–2 hours depending on size.
Peel
Peel the beets as soon as they are done, while they are hot.
Mix
Cut the beets into slices and mix them with coarsely grated horseradish.
Season
Mix the vinegar with sugar and caraway and pour the mixture over the beets. Celery instead of horseradish is also good.
The number of beets and amount of horseradish have been quantified; otherwise measurements are converted to modern units. An oven temperature has been added.
