How to make it

  1. 1

    Slice the potatoes

Cut the washed potatoes into slices about ½ cm thick and put them into cold water as you go.

  2. 2

    Prepare two pots

It is best to have 2 pots of lard: one hot, as for ordinary frying, the other considerably hotter.

  3. 3

    First frying

Take the slices out of the water and dry them well in a cloth. Put them in pot no. 1 for about 5 minutes, or until they float up. Let them drain on a coarse cloth or paper.

  4. 4

    Second frying

Put the slices into pot no. 2 for a moment. When all is as it should be, the potatoes puff up. Sprinkle a little salt over when serving.

  5. 5

    Make ahead

The potatoes can be prepared in advance and only need a moment in a sieve, shaken over the heat. Do not use the otherwise much-prized floury potato for this.
