How to make it

  1. 1

    Bake the potatoes

Place the washed potatoes directly in a hot oven (about 200 °C (390 °F)) until tender.

  2. 2

    Scoop out

Halve the potatoes lengthways. Scoop out the potato flesh with a spoon, leaving a little in the skins.

  3. 3

    Make the purée

Whisk the potato well with 25 g butter, ½ dl boiling cream and the egg. Season with salt, pepper and grated cheese.

  4. 4

    Fill and gratinate

Pile the purée up in the skins. Drizzle a little melted butter over, sprinkle with a little rusk crumbs and, if you like, grated cheese. Put the potatoes back in a hot oven for about 5 minutes.

  5. 5

    Variation

If you like, you can mix a little chopped ham, fish, herring or vegetables into the purée. Try it without the first time.
