How to make it

  1. 1

    Parboil the potatoes

Peel the potatoes and scoop them into balls with a round potato scoop. Put them into boiling, salted water, just enough to cover them. Let them simmer for 10 minutes, and drain off the water.

  2. 2

    Roast in the oven

Place the potatoes in a roasting tin with 2 tbsp melted butter and put it in a hot oven (about 200 °C (390 °F)). Shake the tin often until the potatoes are nicely golden brown.

  3. 3

    Serve

Just before serving, add the rest of the butter, unmelted, and the finely chopped parsley. Gently shake the potatoes in the tin and serve them immediately on a hot dish.
