Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Oxtail divided into vertebrae is browned with onion, carrot and ham, boiled tender in about 3 hours in a brown tomato and stock sauce, and finished with sherry and green peas.

Oxtail was an inexpensive but highly valued ingredient in older cookery. Erken gives several preparations; this ragout is the simplest and most homely.
Divide and wash the tails
Cut the oxtails into pieces so that each piece contains one tail vertebra. Wash the pieces well and dry them.
Brown the meat
Brown the tail pieces in 40 g butter together with the onion slices, carrot slices, and the chopped ham. When everything is well browned, add the bay leaf and peppercorns.
Make the sauce
Brown the rest of the butter together with the flour, add the cut-up, peeled tomatoes (or tomato purée) and the stock. Bring to a boil and season with salt and paprika.
Simmer
Pour the sauce over the tail pieces and let everything simmer for about 3 hours, until the meat is tender.
Finish
Stir in the sherry and the boiled peas just before plating.
Quantities have been converted to modern units (dl, g), Maggi bouillon cubes are given as an alternative to broth/stock, and the cooking time has been made specific. "Meat stock" is specified as beef stock.
