Original 1914 recipe

Erken's mutton noisettes: finger-thick slices of mutton fillet/saddle sprinkled with chopped mushroom, pepper and salt, seared quickly in butter, topped with a square of mushroom cooked down in meat glaze, set on a bread crouton with fried tomatoes and maître d'hôtel butter, served with tomato, brown or mushroom sauce.

From the chapter on mutton in Stor kokebok (1914). "Noisettes" are round, finger-thick pieces cut from the fillet or saddle – an elegant, restaurant-style presentation on a bread crouton with fried tomatoes.
Cut out the noisettes
Cut the meat free of the bones from the fillet or saddle and divide it crosswise into neat, finger-thick pieces. Pound them lightly.
Season
Mix a little finely chopped mushroom with pepper and salt and sprinkle the mixture over the meat pieces.
Sear
Place the noisettes in a greased pan and sear them quickly over high heat until golden brown and juicy.
The mushroom mass
Cook the rest of the chopped mushroom down in a little meat glaze to a firm mass. Pour it onto a platter, cool and cut into squares.
Maître d'hôtel butter
Beat butter soft with finely chopped parsley, a little salt and a few drops of lemon.
Arrange
Place a mushroom square on each noisette and set them on a large bread crouton fried in butter. Arrange fried tomatoes around them and a little maître d'hôtel butter over them.
Serve
Serve warm with tomato sauce, brown sauce or mushroom sauce.
The original does not give quantities for mushrooms, tomatoes, glaze, butter and parsley; these have been estimated in modern measures. The mushroom mixture that is "cooked in glaze, cooled and cut into squares" is interpreted as a firm mushroom purée/jelly-like mass. Maître d'hôtel butter is specified as butter with parsley and lemon.
