About the dish

Frequently asked questions

Do I need sugar for cloudberries in jars?
No. In this method from 1914, only cloudberries and cognac are used. The smallest berries are crushed, the juice strained and poured over the whole berries, so the berries are preserved in their own juice.
Why is cognac used?
The cognac acts as a preservative. The jars are rinsed with cognac before the berries are put in, and a linen cloth dipped in cognac is placed in the jar neck before the cork is tapped in.
How are the jars best sealed?
A cork is tapped in over the linen cloth, and if desired the jars can also be sealed with lacquer to make them completely airtight.
Which berries should be chosen?
Use fresh, whole cloudberries in the jar. The smaller and not-quite-whole berries are sorted out and crushed for juice.
