Cloudberries in Jars

Cloudberries in jars (Erken 1914): small cloudberries are crushed and the juice strained over whole, fresh cloudberries in jars rinsed with cognac; a linen cloth dipped in cognac is placed in the jar neck before the cork is tapped in, and the jars may be sealed with lacquer.

Preserving cloudberries without sugar, from the preserving chapter of "Stor kokebok" (Grand Cookbook, 1914). The cognac acts as a preservative both on the jar and on the linen laid over the berries.

How to make it

    Make juice

    Sort out the smallest cloudberries, crush them, and strain the juice.

    Prepare the jars

    Rinse the jars in which the cloudberries are to be stored with cognac.

    Fill the jars

    Place the whole, fresh cloudberries in the jars and pour the strained juice over them.

    Seal

    Lay a linen cloth dipped in cognac in the jar neck before tapping in the corks. The jars may be sealed with lacquer if desired.
