About the dish

Classic marzipan confectionery shaped like small potatoes, known from Norwegian and German confectioners. The cocoa gives the «earthy skin,» and the holes left by the skewer mimic the potato's eyes.

How to make it

  1. 1

    Roll balls

Roll the marzipan into small, potato-sized balls.

  2. 2

    Roll in cocoa

Put a little cocoa on a piece of paper and roll the balls in the cocoa.

  3. 3

    Prick the eyes

Prick small holes here and there with a skewer or toothpick, so they look like potatoes.

Changes from the original

The skewer can be replaced with a toothpick or pointed wooden stick. Otherwise unchanged.

Frequently asked questions

How do I make the marzipan potatoes look real?
Roll the marzipan into balls, roll them in cocoa sprinkled on a piece of paper, and then prick small «dimples» here and there with a skewer (a toothpick works too).
How much time does it take?
About 25 minutes in all for 10 servings, since the marzipan just needs to be rolled and coated in cocoa.
Where does the recipe come from?
From Henriette Schønberg Erken's «Stor kokebok» (1914), page 628, in the chapter on confectionery and marzipan.
