Marzipan potatoes from Erken 1914: marzipan is rolled into balls, rolled in cocoa on paper, and pricked with a skewer so they resemble potatoes.
Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 628 (falt i det fri)
Classic marzipan confectionery shaped like small potatoes, known from Norwegian and German confectioners. The cocoa gives the «earthy skin,» and the holes left by the skewer mimic the potato's eyes.
Roll balls
Roll the marzipan into small, potato-sized balls.
Roll in cocoa
Put a little cocoa on a piece of paper and roll the balls in the cocoa.
Prick the eyes
Prick small holes here and there with a skewer or toothpick, so they look like potatoes.
The skewer can be replaced with a toothpick or pointed wooden stick. Otherwise unchanged.
