Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 337 (falt i det fri)
Erken's simple demi-glace from the sauce chapter: a heavily reduced base sauce used as a flavor base and to strengthen other brown sauces. The quantities are partly unclear in the original print.
Reduce
Reduce the brown sauce and the broth together down to about 1 dl.
Finish
Set the pot in a water bath, add the sherry, and cover the sauce.
Measures converted to modern units (l, dl). Some quantities were unclear in the print and have been interpreted from context. The method has been divided into numbered steps.
