Curry sauce from 1914: a butter roux with curry and finely chopped celery thinned with warm stock or milk, simmered 10 minutes, strained and brought to a boil again.

Curry entered Norwegian cookbooks by way of English cooking, and Erken places this spiced base sauce among the warm sauces, typically for poultry, fish or boiled meat.
Roux
Melt the butter and stir in the flour. Add the curry and finely chopped celery, and let it simmer a few minutes.
Thin
Thin with the warm stock or milk and let the sauce simmer for 10 minutes.
Strain and boil
Strain the sauce, return it to the pot and bring it to a boil. Season with salt.
Measurements are given in modern units (g, dl). The method is divided into numbered steps.
