Original 1914 recipe

Veal in cabbage from Erken's Stor kokebok (1914): veal is tossed in flour and salt, browned in butter, layered with blanched cabbage, and simmered about 2 hours with whole peppercorns added for the last 30 minutes.

A veal version of fårikål (mutton and cabbage) from the meat chapter of "Stor kokebok" (1914). The dish relates to Erken's remarks on suckling veal, where she holds that veal does well in a cabbage dish.
Prepare the meat
Crack the bones, wash the meat, and cut it into suitable pieces.
Brown the meat
Mix the flour and salt, toss the meat pieces in the mixture, and brown them in the butter.
Layer in the pot
Wash the cabbage, cut it up, and blanch it. Layer the meat and cabbage in a pot.
Cook
Pour on enough boiling water to come halfway up the meat. Let it simmer until everything is tender, about 2 hours.
Pepper
Add the whole peppercorns during the last half hour of cooking.
Quantities are given in modern measures (grams, liters, teaspoon) and the cabbage is estimated at about 2 kg, since the original gives no amount. The method is written in modern Norwegian and divided into steps.
