Cabbage Pudding

Cabbage pudding from Erken 1914: two heads of pointed cabbage are boiled until tender in broth, chopped, and combined into a white sauce of 50 g butter, 40 g flour, and 4 dl milk, with 6 eggs, coarsely chopped salt meat/tongue/ham, and spices. Baked in a mold for 1 hour and served with creamed butter.

Cabbage pudding was a common everyday dish in which cabbage and leftover salt meat, tongue, or ham are baked in a mold with white sauce and eggs.

How to make it

    Cook the cabbage

    Boil the cabbage until tender in the water with the bouillon cubes added.

    Chop the cabbage

    Remove the cabbage and chop it a little.

    Make the sauce

    Melt the butter, stir in the flour, and thin with the milk to a smooth sauce. Let it come to a boil.

    Combine

    Stir the cabbage into the sauce, remove the pot from the heat, and add the egg yolks, the coarsely chopped meat, and the spices. Finally fold in the stiffly whipped egg whites.

    Bake

    Pour the mixture into a greased and crumb-coated mold and bake in the oven at 175 °C (345 °F) for about 1 hour.

    Serve with creamed butter.
