About the dish

The coffee tart is one of the yeast bakes in the 1949 edition, made for the coffee table. Rolled pieces set close together in a round tin form a ring of spirals around a centre piece.

How to make it

  1. 1

    Make the yeast dough

Mix the sifted flour and the sugar. Melt half of the butter in the milk, stir it into the flour and add the yeast. Leave the dough to rise for 30 minutes. Knead in the rest of the butter and leave the dough for another 30 minutes. Knead it well.

  2. 2

    Make the cream

Stir the egg white with the sugar. Bring the milk and potato starch to the boil, and stir the egg white into it. Stir over the heat until smooth, pour it out and stir until the cream is cold.

  3. 3

    Fill and shape

Roll out a quarter of the dough into a fairly thick round and lay it in the bottom of a round, greased tin. Spread a thin layer of cream over it. Roll the rest of the dough into a long sausage, pat it flat and spread with a thin layer of cream. Scatter over the raisins and candied peel, and fold the dough together again. Cut the «sausage» crosswise into 8 equal pieces. Set them around the tin and one in the middle, cut side up.

  4. 4

    Rise and bake

Leave the tart to rise for 15 minutes, brush with egg and bake for about 45 minutes in a not too hot oven (about 175 °C (345 °F)).

  5. 5

    Finish with glaze

Carefully turn the tart out of the tin and coat it with rum glaze.
