Mix cabbage and ham
Mix the finely cut ham and the finely cut raw white cabbage.

Make the dressing
Whisk the egg yolks, cream and melted butter together over the heat until it only just boils. Take off the heat and stir until cold. Drip in the oil and vinegar.

Mix
Stir the dressing into the cabbage and ham.
