Young carrots cooked tender and tossed in butter with parsley, lemon juice, salt and pepper. "À la maître d'hôtel" means the vegetables are turned in butter with parsley and lemon – a classic French preparation. From Erken's Stor kokebok 1914, p. 372.

Clean
Scrape and wash the carrots. If they are quite young, a couple of small leaves may be left on.
Cook
Put them into boiling, salted water and cook for 15 minutes, or until they are tender.
Steam dry
Drain off the water and steam the carrots dry in the pot.
Toss in butter
Put butter, parsley, lemon juice, salt and pepper in the pot, and toss the carrots in this for a few minutes before serving.
Measurements are converted: 1 dessertspoon of parsley is given as 1 tablespoon of finely chopped parsley. Otherwise unchanged.
