The dish turns kale into a neatly arranged vegetable course with white sauce, garnished with tomato and egg.
Boil the kale
Wash the kale and strip the leaves from the stalks. Boil in salted boiling water for 10-15 minutes. Pour cold water over and drain well. Chop or mince finely.
Make white sauce
Melt the butter, stir in the flour and add the milk to make a thick white sauce. Cook it through.
Combine and season
Add the chopped kale to the sauce and season with salt, nutmeg and a little sugar.
Serve
Arrange the kale neatly on a dish. Lay the cooked celeriac or cucumber in neat slices alongside, and garnish with tomato and egg wedges.
Measures are given in modern units. «En tanke» of nutmeg is written as a pinch, and the sauce quantities follow the text without additions.
