Flounder Fillet à la Royale

About the dish

An exotic "royal" presentation from the fish chapter of Stor kokebok (1914). At this time bananas were a rare and fine imported good, and the combination of breaded flounder fillet, banana, and tomato butter shows clear inspiration from the French restaurant kitchen.

How to make it

    Preparation

    Clean the flounder and cut out the fillets. Salt and pepper them.

    Breading

    Dip the fillets in melted butter and turn them in finely crushed breadcrumbs. Score the top of the fish crosswise.

    Frying

    Drizzle the fillets with melted butter and fry them slowly to a nice light brown in butter, 3–4 minutes on each side.

    Bananas

    Cook the peeled banana halves gently in washed (clarified) butter, and place a banana half on each fried fillet.

    Tomato sauce

    Cook the tomatoes down and press them through a sieve. Wash the butter, add the tomato purée with salt, pepper, and parsley, and let the sauce simmer gently over low heat for 15 minutes.

    Serving

    Arrange the fillets with banana on a warm platter and serve the tomato-butter sauce alongside.

Changes from the original

"Rusk" has been modernized to breadcrumbs, and "well-washed butter" to washed/clarified butter. The number of spoons of butter for the sauce is given in grams. Frying time and temperature have been specified.
