Scraped raw fish is blended into a white sauce with nutmeg, yolks, stiffly whisked whites and white wine, baked in a dish and served with a Spanish sauce of milk and cream. From Erken's Stor kokebok (1949), p. 158.

The gratin is made from raw, finely scraped fish rather than cooked, and the recipe also covers the fish stock from bones and skin. Spanish sauce was a rich cream sauce.
Scrape the fish
Cut the cleaned, washed and dried fish from skin and bones. Scrape it very fine from the tail upwards. Use haddock, saithe or cod.
Make the mixture
Melt the butter, stir in the flour and thin gradually with the milk. Bring to the boil and cool. Stir in the scraped fish a little at a time, then the nutmeg, egg yolks, stiffly whisked egg whites, wine and salt to taste.
Bake
Pour the mixture into a buttered, dusted dish. Sprinkle finely crushed rusk over and bake in the oven for ½–¾ hour. Serve in the dish.
Make stock
Put the fish bones and skin on to heat with just enough cold water to cover. Add 1 heaped teaspoon of salt per litre of water.
Make Spanish sauce
Melt the butter, stir in the flour and thin with the milk. Bring well to the boil, add the boiling cream and simmer, stirring, until reduced by half. Just before serving, stir in parsley, anchovy butter and lobster colouring. Season with salt.
Quantities are unchanged; 'del.' is dl and '¾ l' is given as 7.5 dl. The source gives no oven temperature. '1 anchovy butter' is rendered as in the original.
