About the dish

From the dessert chapter of Henriette Schønberg Erken's Stor kokebok (1914). Apples were one of the most important dessert ingredients in Norwegian homes, and the chapter holds a long series of variations on cooked and baked apples.

How to make it

  1. 1

    Prepare the apples

Core the apples and peel them.

  2. 2

Bring the syrup to a boil

Put water, sugar, and lemon juice over the heat in an enameled pot (not iron or aluminum).

  3. 3

    Cook the apples

Place the apples in the syrup and let them simmer gently until they are well half-tender. Turn them carefully so they don't fall apart.

  4. 4

    Stud with almonds

Lift the apples into an ovenproof dish. Blanch the almonds, skin them, and cut each almond in two lengthwise. Stick the almond halves into the apples.

  5. 5

    Bake

Sprinkle powdered sugar over the apples and put the dish in the oven (about 200 °C (390 °F)) until they are lightly browned, 8–10 minutes.

  6. 6

    Serve

Serve the apples warm with jam, or cold with stiffly whipped cream piped on with a pastry bag.

Changes from the original

Measurements have been converted to modern Norwegian units (deciliters kept, teaspoon/tablespoon modernized). "Flormelis" is given as powdered sugar (confectioners'/powdered sugar), and "sweet almonds" as ordinary almonds. The method has been divided into numbered steps and modernized in language, without changes to quantities or technique. Oven temperature is given as guidance (the original gives none).

Frequently asked questions

How long should the apples cook in the sugar syrup?
They should cook until well half-tender – not completely soft, since they will be finished in the oven until lightly browned. The total time for the recipe is around 50 minutes.
How are the almonds prepared?
The almonds are blanched (skinned) and split lengthwise in two. The halves are stuck into the cooked apples before they are sprinkled with powdered sugar and browned in the oven.
What is served with them?
Served warm with jam, or cold with stiffly whipped cream piped through a pastry bag.
What kind of pot is recommended for the cooking?
The recipe from Henriette Schønberg Erken's Stor kokebok (1914) calls for an enameled pot, which does not discolor the tart apples.
