About the dish

A variant of browned potatoes in which pre-boiled potatoes are shaped into balls, coated in rusk crumbs and sugar and browned in butter. A common festive side dish for roasts.

How to make it

    Boil the potatoes

    Boil the potatoes in their skins in salted water and let them cool.

    Form the balls

    Peel the potatoes and scoop them into small round balls with a melon baller.

    Coat

    Mix the rusk crumbs and sugar and roll the potato balls in the mixture.

    Brown in butter

    Brown the butter in a pan, add the potato balls and shake the pan while the potatoes fry to a nice brown. Serve at once.
