Erken's banana and bell pepper salad from 1914: banana slices moistened with lemon juice on lettuce leaves, sprinkled with strips of bell pepper, and topped with mayonnaise stirred with a tablespoon of heavy cream.

A small, elegant fruit salad from the salad section of Stor kokebok. The combination of banana and mayonnaise was typical of the era's "modern" party salads.
Prepare the bananas
Peel the bananas, cut them into slices or sticks, and moisten with lemon juice so they do not darken.
Arrange
Place the lettuce leaves on a platter and lay the bananas on top.
Sprinkle with bell pepper
Sprinkle strips of bell pepper over the bananas.
Pour over the dressing
Stir the heavy cream into the mayonnaise and pour it over the salad. Serve at once.
"Spanish pepper" is modernized to bell pepper, "hodesalat" to head lettuce. Quantities are estimated, since the original only lists the ingredients. "1 spoon of heavy cream" is interpreted as 1 tablespoon of whipped heavy cream.
