Green beans (snap beans) were grown in Norwegian kitchen gardens, and Erken uses them here in a baked omelet - a light side dish in season.
Make the roux
Melt the butter, stir in the flour and thin with the milk. Bring it to a boil, salt, and take the pot off the heat.
Mix in eggs and beans
When the mixture has cooled a little, stir in the egg yolks. Then fold in the stiffly beaten egg whites and the cooked, cold, cut green beans.
Bake
Fill the mixture into a buttered dish and bake 3/4-1 hour in a hot oven (about 180 degrees C). Serve immediately.
"Aspargesbønner" (asparagus beans) is specified as snap beans/green beans. Amounts in modern units, and baking time/temperature is given (about 180 degrees C).
