Fruit salad from Erken 1914 with 3 bananas, 3 oranges and 1 boiled, finely chopped celeriac, dressed with mayonnaise.
Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 424 (falt i det fri)
A simple fruit salad with celeriac from the chapter on salads, omelets and intermediate courses. The combination of fruit and mayonnaise was typical of finer salads around 1914.
Boil the celeriac
Peel the celeriac, boil it tender in lightly salted water, cool it and chop it finely.
Cut up the fruit
Clean the bananas and oranges and cut them into thin slices or dice.
Mix and serve
Mix the fruit with the boiled, finely chopped celeriac, arrange the salad on a platter and pour the mayonnaise over it.
Modern spelling in the ingredients; the mayonnaise is given as an amount (about 2 dl) since the original only refers to "mayonnaise sauce."
