Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Thinly sliced cucumber salted and pressed for 2 hours, then mixed with oil, vinegar, and pepper; can be seasoned with sugar instead of oil. Erken 1914.

A classic pressed cucumber salad served with fried meat and fish. Erken gives the French name, which was common in finer cookbooks of the time.
Slice the cucumber
Peel the cucumber and cut it into paper-thin slices with a sharp knife or on a cucumber slicer.
Press with salt
Sprinkle salt over the slices and let them stand under light pressure for 2 hours.
Pour off the liquid
Pour off the liquid that has formed.
Mix
Mix the cucumber with oil, vinegar, and pepper. Sprinkle a little finely chopped chervil or parsley over if you like. If you want to omit the oil, add a pinch of sugar to the vinegar instead.
Measures modernized to tablespoons; 'table salt' kept as salt. The 2-hour pressing time is included in the total time.
